Preparation
Serves 10.
1. Stir fry 60g oil and 300g KNORR Thai Red Curry Paste in a large pot for 2 minutes. Mix and add 225g of KNORR Coconut Milk Powder to 1.3 liters water.
2. Add 1.4kg of diced chicken, game or seafood, 100g Thai pea eggplant, 400g halved cherry tomatoes, 400g chopped snake beans and 6 crushed lime leaves. Heat until the meat is cooked through.
3. To season, add 35g palm sugar and 30mls fish sauce. Serve curry with steamed jasmine rice, coriander and julienne lime leaf.
Depending on taste preference, more or less paste can be added.
Storage
After opening store in a refrigerator for up to 5 days.
